Hot Bamboo & Spinach Dip

1 (8 ounce) package cream cheese

¼ cup mayonnaise

¼ cup grated Parmesan cheese

¼ cup grated Romano

1 clove Garlic, peeled and minced

½ teaspoon dried basil

¼ teaspoon garlic salt

Salt and Peper to taste

2 cups drained Marinated Bamboo Shoot Pieces

½ cup frozen chopped spinach, thawed and drained

¼ cup shredded mozzarella cheese

Step 1- Preheat oven to 350 degrees F. Lightly grease a small baking dish.
Step 2- In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic salt, salt and pepper. Gently stir in the bamboo and spinach.
Step 3- Transfer the mixture to the prepared backing dish. Top with mozzarella cheese. Bake in preheated oven for 25 minutes, until bubbly and lightly browned.
Italian Bamboo Shoot Topping for Crostini or Crackers

1 cup Italian salad-style bamboo shoot pieces (with capers, tomatoes, olives, and oil)

2 tablespoons olive oil

1 bunch Swiss chard, stems removed and leaves chopped

2 medium fresh tomatoes, diced

1 cup Italian Salad Style Bamboo Shoots Pieces

8 oz angel hair pasta or similar

Fresh herbs (like basil or parsley), for garnish

Grated Parmesan cheese, optional for serving
Instructions:

Prepare Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-6 minutes per side. Remove from skillet and set aside to rest.

Cook Pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside, reserving about a cup of pasta water.

Sauté Garlic and Swiss Chard: In the same skillet, add another tablespoon of olive oil. Sauté the minced garlic for about 30 seconds, then add the chopped Swiss chard. Cook until the chard is wilted, about 3-4 minutes.
